Fattoush (Lebanese Summer Salad)

We had a lovely lunch for my Mum’s birthday on Sunday. Even though it was at her place  we tried to make sure that she spent as much time as possible sipping Prosecco and being the Birthday girl rather than being in the kitchen. My step dad is an amazing cook and entertainer so he took to the BBQ with gusto (garlic prawns/cutlets/potatoes in duck fat) and my ever clever brother in law (the ex-chef) took to the salad making while my younger sister cleaned up and I, um, well took photos and sipped Prosecco. Seeing as I did it so well on Good Friday I thought I’d try that out again.

Mum requested a Fattoush salad . A lebanese summer salad using pita bread combined with greens and salad ingredients. It is so simple and dead set delicious and the perfect salad to go with a BBQ or some slow cooked lamb. Actually, anything. It’s just delicious. Make it.

Fattoush (Lebanese Summer Salad)

3 pieces Lebanese Bread
3 cucumbers (peeled & seeded)
Punnet of cherry tomatoes
Bunch shallots
Bunch radishes (thinly sliced)
1 red onion (thinly sliced)
1 red capsicum (diced)
Bunch of mint (leaves torn off)
Bunch parsley (leaves torn off)

Dressing:
Juice of 1 lemon
1 clove garlic crushed
3/4 cup olive oil
Salt & pepper

1. Drizzle some olive oil over pieces of Lebanese Bread with some salt and pepper and place in the oven until crispy (just a few minutes in a hot 180 degree oven) and set aside

2. Peel and de-seed the cucumbers and roughly chop – add into the bowl

3. Halve the cherry tomatoes – add into the bowl

4. Using a mandolin (if you have one) thinly slice the radishes – add into the bowl

5. Roughly dice a red capsicum – add into the bowl

6. Chop a bunch of shallots – add into the bowl

7. Thinly slice a red onion – add into the bowl and tear in the leaves from the mint & parsley and add them in as well

8. Add all the ingredients for the dressing into a jar and give it a good shake

9. Break up the cooked (cooled) Lebanese bread – add into the bowl

10. Pour in the dressing and give it a good mix before transferring to your serving platter

We ate ours with the duck fat potatoes and cutlets and it was just so simple and delicious. Great taste combination too!

    I love all things Lebanese! Thank you for sharing this 🙂 it’s on my next weekly meal plan. I have to ask though… How freaking big is your family?!? And do you seriously all get along??? You always seem to be celebrating! And I’m so jealous! I have a large family but we have all drifted and now live all over the country and the globe really. You are so blessed Beth, and I love that you know and acknowledge that. Thank you for sharing an insight into your family 🙂

    • Ha! I am one of 4 kids…and having divorced parents on both sides (Rob’s and mine) mean there are LOTS Of grandparents to catch up with! I feel very lucky to have the family I do and that we all get on so well (well most of us anyway!!!)

  4. Love fattoush! We use sumac in the dressing. Gives it a bit of a tart taste and a red color. The first time I had it, it was topped with deep-fried strips of pita bread. I bake mine, or bake wonton strips.

  5. This is my all-time favourite salad, living over here I make it a lot (and order it a lot).
    Add a sprinkle of sumac for a (traditional) great flavour. I also use a little romaine lettuce as well.
