Cauliflower & Parmesan crisps

You’ve got to love my Mum Sue. She is a fabulous cook – taught me everything I know about food and entertaining, she and my Dad raised 4 children that are all (pretty) well adjusted and together and she has now taken to new technology with gusto. A few years ago she didn’t even know how to turn on a ย computer and now she is across SO many blogs and areas of social media – my brother gave her an iPad 3 years ago and it transformed her evening life. Instead of watching TV, you will find her reading, playing scrabble, scrolling through Houzz and reading blogs. She adores Instagram, now she knows how to add photos to Facebook she is adding things every other day and just a weeks ago she discovered Pinterest.

She found a recipe on a friends Facebook page, and thought to herself “oh that looks good” so she saved the picture to her camera roll, added it top Pinterest and thought nothing of it. Now this one picture has been pinned 335 times. AND SHE HAS NO IDEA WHY. There was just a picture, no recipe. Of course she made them but all those paleo bastards are going mad for it. So this afternoon while we popped a bottle of champers together we decided to give them a crack again so I could see for myself what all the fuss was about.

Cauliflower & Parmesan Crisps

1 cup grated cauliflower
1 cup grated parmesan
1/2 teaspoon crushed garlic
1 teaspoon chopped basil
1 teaspoon chopped parsley
1/2 teaspoon black pepper

Preheat the oven to 200 degrees celsius

1. Grate the cauliflower add into a bowl

2. Add a cup of parmesan into the bowl

3. Finely chop the parsley & basil and add in as well as the garlic & pepper

4. Take a small handful of the mixture and place it on a lined baking tray and whack it into the hot oven for 5 minutes

6. After 5 minutes turn them over and place back in the oven for a further 5 minutes

7. Let them cool for a minute or so then get stuck in. You’d never know you were eating something vego paleo. That is, until, you instagram it to tell the world. Champagne works well as a side I found, like most things.

These were not quite as crispy as the original pin would imply (they looked more like parmesan chips) but they were very good indeed. Enjoy!

  2. Yeah you had me at champagne with mum also! I’m not a big cauli fan, unless it’s paired with something like parmesan and then it’s lifted to the next level. I’m going mad for these sort of snacky things at the moment, been making some sweet potato chips and dried apples etc. for the constant snacking that goes on with growing this human, so it seems. I’m going to give these a whirl in my NEW kitchen next week!

    Sue sounds totally rad, my ma Gab is rad too, waved her off to Nepal last night on her merry way for four weeks, ipad charged and at the ready. Last year she spent some time volunteering in India, and then a four month Thelma and Louise tour from Darwin to Perth with her equally as single-with-grown-children bestie. Bless their cotton socks. Sue and Gab would get on like a riot I think.

  5. Having just got on the old Paleo/gluten free diet thing (not by choice), these are bloody awesome. Yesterday we went to the supermarket to buy cornflakes and did you know Kellogs use barley and malt (gluten in other words) to make their brand taste better? It’s the same with a lot of crisps/chips brands so you really have to read the labels. For my husband who now has to go gluten free these are perfect. They’re not exactly paleo because of the dairy but they’re a perfect snack/appetiser for the GF people. I shall be pinning this to my Pinterest board and making it often.   6. How simple. I have everything either growing or on hand but the cauliflower. Oh, and the champagne. However, a nice, light Ruffino Orvieto will go into the fridge, and Hubs to the Winn-Dixie this afternoon. ๐Ÿ™‚

  7. Love it. My Mum is the same, loves her ipad, iphone and facebook. (She hasn’t quite made it to Instagram or pinterest yet) I think it is great that they get into it, I do get the occasional phonecall asking how to do something on her iphone or ipad and she has managed to make changes on her iphone that I never knew existed ๐Ÿ™‚ but it is so foreign to them and the fact that they are embracing it is great! Love the recipe too

    I think it’s great when we older persons find modern technology but I must admit I am content just with blogging and Facebook. I play over 50 games of scrabble with friends here and in New Zealand which keeps this old brain alive. I have met so many wonderful people on Facebook which is good for me as I don’t get out of the house very often. Keeps me in touch with the outside world. I don’t have an iPad or laptop but never likely to have. My iMac will have to satisfy me and after all I must spend time with Phil of an evening and he likes to watch TV. Incidentally, he has a real dislike of computers.

  11. I am just a little bit in love with your mum, Sue – got room for one more in your family?! These sound delish. The humble cauli is making a huge comeback. All the health nuts seem to be making ‘cauliflower rice’ these days. Suppose I should get on board, so I’ll start with these crisps (with the recommended side serving of champers, of course)…

      Mum was explaining to me cauliflower rice…I’d not heard of it. Let me know how it goes…I imagine it would go down like a lead balloon round these parts.

    Just brush them with a little olive oil or cooking spray. They’ll crisp right up.
