Feeding School Kids: Sultana Cake

We are now into the first few weeks of the School year and it must be said, I am already over the packing of the School lunch box. Actually, it’s safe to say that I was over that on day 2. If it’s not coming up with stuff to put IN the lunchbox, there is the inevitable post School depletion of my pantry, fridge and fruit bowl. I have visions of baking something at the start of the week and stocking my freezer with creative, healthy snacks and treats, but I am not that person. What I can do is try to make something that I know WILL get eaten, something that can double up for lunchbox and arvo tea and something that is half way not too bad (my quality control used to rate healthy food when feeding small people.  Kind of OK works for me).

Last year I started to focus on organic food for our family. It’s something that I feel really strongly about: if you can get something that has been grown organically, and if it’s reasonably priced, then I will. The visit to an organic chicken farm and a local organic veggie farm last year cemented that fact for me so we have been eating (mostly) organic meat and fruit and vegetables – growing some of our own and of course using the eggs from our girls. I am slowly making the transition to other grocery items as well – the Macro organic range in Woolies suits me for this fact as it is continually growing, it’s easy to access (and find amongst all the products with the purple labelling) when I am doing my other normal grocery shop and the prices are reasonable. So now I am using their organic flours, pastas, tinned goods and peanut butters in my pantry stores.

This simple cake hits the mark for me. I can use organic ingredients, the kids will eat this and I can fill School tummies during AND after the day.

Sultana Cake

250 grams butter
1 cup caster sugar
1 teaspoon vanilla essence
3 eggs
3 cups plain flour
1 teaspoon baking powder
1 cup milk
3 cups sultanas

(recipe originally adapted from Taste)

1. Beat the sugar, vanilla essence and the softened butter until combined and light and then add the eggs in one at a time

2. Sift the plain flour and the baking powder into a separate bowl then add in half the flour and half the milk, fold it in and then the last half of the flour and milk

3. Fold in the 3 cups of sultanas

4. Butter and Line a loaf tin with baking paper

5. Place in a 170 degree oven for 1.5 hours (or until a skewer comes out clean then it’s ready)

7. Serve up to hungry after School kids (I’ll take mine with butter slathered on and a cup of tea please) or just a small serving wrapped up for the lunch box.

  2. I just came across the easiest cheesy muffin recipe… Ever! Equal parts milk, self raising flour and grated cheese (2 cups of each gets about 24 half size muffins). Mix, whack in some muffin cases and bake for 30 mins in a 180deg oven. Could use wholemeal SR flour for extra goodness, or add stuff – grated zucchini/corn/carrots/spinach/sun dried toms etc!

  4. God Damn I love a sultana cake! Loving your pintable recipe – well done you! I’m a fan of having rolls of choc chip biscuit dough frozen in the freezer…I cut bits off for afternoon tea and everything thinks I bake fresh everyday (who has time for that?!). I’m a massive fan of frozen biscuit dough. I’ve got the recipe on my blog…but not in the fancy ‘Get Me Cooking’ form! Must get onto that quite clearly…all the cool people are.

  5. I’ve been making a Speedy Banana Loaf for lunch boxes which is proving very popular here. Its from a 20 year old Family Circle cookbook. It’s so fast and easy and I love using up old ‘nanas. Sometimes I throw a few dark choc chips in for something different.

  6. Love me an old-school sultana cake. And where possible we buy organic too. The macro range makes it easy for me with baking. We use the Macro butter too. Am trying to make something each Sunday for the lunches/afternoon tea. It really doesn’t take so long, is cheap and gets me brownie points with the kids!

  10. Yum! In case anyone is interested, I just made this with gluten-free flour (same quantity) and it worked perfectly. I added the zest and juice of one lemon too. Delicious! Thanks Beth x

    Yum Beth I am going to give this a shot when Miss A gets home from school – she loves baking with me. Unfortunately I know she will pick out every damn sultana but hubby will love it for morning tea.

    I’ve not baked a cake for yonks but this recipe has me interested in doing so particularly as it is freezable. As diabetics Phil and I like a small piece of cake with a cuppa for a/tea and this one sounds reasonably safe for us.
    Have you ever checked out our granddaughter’s blog? It is Childhood101 in which she and others advance ideas for play, food etc etc for young children. Christie has won two overseas awards for her blog (one in Singapore and the other in another Asian coiuntry) and also awards for her book. Perhaps if you ever have time to spare you could check it out. I think this week she had ideas for lunch boxes and also is doing a promotion for Ryvita and there are prizes for the best idea for a Ryvita toppings. Just a suggestion.
