Easy (like a Sunday Morning) Lunch

Rob has always done a lot of cooking since we have been together. He loves to cook as much as I love to eat and is always willing to try news things. Since we moved down here and a few nights of the week Rob is working from out the back he has the luxury of eating with us - even if it is at about 5.00 or 5.30pm most nights. Because we eat so early I am the one that usually does all the cooking so come the weekend he is in charge. Win!

We were meant to have this for dinner Saturday night but due to an episode in controlled crying (more on that later) we both lost our appetites. Funny that! So we just drank instead - which helps calm the nerves and also sleep soundly so you can't hear the crying that inevitably comes later in the night. That's the method to our madness anyway. So, this became Sunday lunch instead which Daisy loved. It's simple, easy and best of all tasty.

Rob's come-what-may Kebabs
A couple of lamb back straps
Some sumac
A lemon
Some plain yoghurt
Bunch Parsley
Bunch mint
Punnet of cherry toms
A red onion
Cucumber
Some flat wraps

: Mix lemon juice from one lemon into plain yoghurt



: Tear off leaves from parsley & mint
: Chop cherry toms in half
: Slice cucumber and halve
: Slice red onion thinly
: Chuck all together into a bowl


: Sprinkle lamb with sumac and cook in hot pan until medium then leave to rest
: Chop into pieces and chuck on top of salad



: Pour yoghurt dressing on top and toss


: Add into wrap, roll up and enjoy!

  5. Yum. That is my perfect weekend lunch.

    I'm blessed to have a husband to love to cooks and is bloody good at it too. My mum frequently comments that it's interesting that all her kids married very good cooks, as my parents were a disaster in the kitchen growing up.

  6. Healthy and delicious! I've just read your post from yesterday too..food for thought. It's amazing how fast some changes occur which change our lives completely. I am so glad you're still happy with the outcome though.

    Thanks for this recipe. I've just made it for the second time in a fortnight for my family of 6. I'm happy to say they all loved it - right down to the 2 year old. I did it as a salad without the wrap (a few wheat intolerant family members). I'm going to try it with roasted capsicum too. Tell Rob he gets the thumbs up from us.
